Vegetarian: A vegetarian is a broad term for one who does not consume meat or seafood.

Ovo-Lacto Vegetarian: One who does not consume meat or seafood, but does eat other animal products such as egg or dairy. When people in the U.S. use the term "vegetarian" they are most often referring to Ovo-Lacto Vegetarians.

Pescetarian: One who does not consume the meat of land animals such as beef, poultry or pork, but does consume fish and other seafood.

Vegan: A strict vegetarian who does not partake in the consumption of any animal products including seafood, eggs and dairy. Vegans also abstain from the use of animal products such as leather and wool. There are differing degrees of vegans, for example a strict vegan will not consume honey or refined sugars.
